Love this time of year!

I Love this time of year!!

I Love the temperature change.

I Love the leaves change colors and how the mountain looks on fire.

I Love all the fruit and vegetables coming on.

I Love the football games (BYU) mostly.

I Love the kids are in school.

I Love how it means that there are three great holidays.

I Love everything about this time of year.

Today I spent most of the day making Raspberry Peach Jam. You should see you pretty they look I can't wait to taste them and see how the turned out. If my cord to my camera wasn't lost I would add a pic, maybe later. I'm Thankful for the fruit that my grandpa gives me, if it wasn't for him I wouldn't have much of a food storage. So thanks gramps for all the hard work you put into your garden and then sharing and giving me the hard work of putting the to use. Its nice to go to the cold storage and get want we need without going to the grocery store. I love you.

A little getaway

So Sunday night Randy and I went out to wendover for the night to celebrate our 10Th wedding anniversary. I know its a few weeks early, but it is the only weekend we could get away.
Randy is going hunting with his uncles and my dad durning the week of our anniversary and the only two weekends he had off were this weekend and the weekend of the 28Th. But that day is the day our primary is having the program and since I'm the sunbeam teacher I thought I shouldn't miss it.
So we celebrated it almost a moth early. So we dropped the boys off at grandpa and grandma Peterson's until aunt Brenna could get off of work to watch them over night, and then we were off. We try not to go out on Sunday's but sometimes you can't help it.
So we started our day off with eating lunch at citrus grill in draper. The food was great. Then we hit the road. We had a free coupon for the hotel and so we used it and checked in. They put us on the sixth floor. We went to to the room to drop off the bags and look around. We turned the t.v. on and the remote wasn't working so I called the front desk, they said they would send maintenance. We waited around for 30 mins and know one showed so we called back and told them we weren't waiting any longer and they could come in and fix it. So when we came back it still wasn't working so we called again they said they would send someone and told told him we weren't going to await. So we left and got dinner. When we came back for the third time it still wasn't working, so I called again and told them it was the third time we called, they said again they would send someone. Less than five minutes some knocked on the door. They finally fixed it. But Some time in all that waiting I was looking out the window and told Randy that I thought we had a great view. He came over and looked at with me and agreed. he said how from here you could see how the earth is round and how you can't see it anywhere else close around.. It was really wonderful to see something that you don't get to see or ever think about very often.I think the the Utah salt flats are beautiful. How the white salt looks so clean and pure. I just felt at that moment that Heavenly father would make something so spectacular. And I'm' glad I could see something so amazing. It was nice to have time with out the boys, even though we love them so very much, but sometimes you want time alone, especially when your boys are at the age when they think mom and dad kissing is gross.

Cooking

So I don't mind cooking. But I really hate when there are complainers and most of all I hate cleaning up the mess. But once in a while I find something that I really enjoy and don't mind cleaning up. It is out of the 2008 Pillsbury Bake-off cook book.
Malinda and I tryed it when she was out here and stayed the week with me, we both thought it was the best breakfast we had in a long time.So I thought I would share it with everyone. It says it takes 40 minutes for start to finish, but it really doesn't take that long.

Tropical Sunshine Flat cakes with Orange Cream

Ingredents:

Flat cakes

1 tablespoon Crisco pure vegetable oil

1/2 cup fishers chef naturals pecans

1 can Pillsbury's refrigerated orange flavor sweet rolls with icing (8 rolls)


Topping

2 tablespoon land o lakes butter

2 firm rip bananas sliced

2 tablespoon lime juice

1 cup fresh or canned pineapple tidbits drained

1 jar (12oz) smuckers pineapple ice cream topping

1 can (15oz) mandarin orange segments in light syrup drained


Orange Cream

1 1/4 cups whipping cream
icing from can of sweet rolls

1. Heat oven to 400f. Generously brush 1 tablespoon oil on large cookie sheet

2. Cut waxed paper sprinkle 1 1/2 teaspoons nuts on sheet. Place orange roll on pecans sprinkle 1 1/2 teaspoons nuts on top of orange roll. using rolling pin roll evenly until orange roll is 4 1/4 inches in diameter. remove waxed paper. place rolls on cookie sheet. repeat with reaming rolls.

3. bake for 8-10 minutes or until golden brown.

4. meanwhile, in 10-inch skillet, melt butter over medium high heat. Add bananas, lime juice and pineapple; cook 1 minute, stirring frequently. reduce heat to medium -low. gently stir in pineapple topping; cook 3-4 minutes, stirring occasionally, until warmed. gently stir mandarin oranges.

5. In medium bowl beat whipping cream and icing with electric mixer on high until soft peaks form.

6. to serve, top flat cakes with warm pineapple topping and orange cream.

Hints- when we first made this I didn't have the ice cream topping or the lime juice instead we used crushed pineapple instead of tidbits.

Musuem Trip

This year instead of going somewhere fun out of state for are family vacation we stayed here. We took one day before school started and choose some museum's around Salt lake to visit. We started at the Living Planet Aquarium The Coolest things there were the octopus, they had three types of jelly fish one kind changed colors. The Sting rays you could feel, they were rubbery and slimy. It was something to visit once and then never go back again. It is very small and for the price they charge it doesn't seam worth it.








Then it was lunch time, so we thought the boys might like the Mayan Restaurant. they liked the cliff divers, although we didn't much like the food.





Randy's friend had told him about this store called the NPX. He told him it was off of 215 and California Ave. We couldn't find it, so we pulled into a gas station and looked it up in the phone book and found three listings we choose the closes to where we were. It is off of Redwood rd. and a block south of California and a block west of redwood rd, so much for it being right off of 215 and California.
Its kind of a warehouse store, its worth going to if you're in the area but not worth just going to.

Then we headed to the Discovery Museum at the Gateway mall. Buy the time we got there we only had an 1 1/2 to go through it. The coolest part I thought was the ball area. the Tyler like the news station area, he is very into watching the news lately , so I think he like the idea of sitting behind the news desk. Clays favorite was the climbing wall. It wasn't as fun as we thought it would be. So since we were at the gateway and Randy had never been to the Clark Planetarium we visited it. My favorite thing there is watch the pendulum,and how the earth is moving making it move. I think Randy's favorite was the moon rocks and the meteorites and the boys like the 2news weather board.















All in all we had a great time, but we were all a little disappointed in the museum's. We probably well never go back to any of them again. But it was fun spending time together as a family. next year we will have to do something fun and exciting.

Utah County Fair

A day at the County Fair. It was so fun to go to the fair withe family. My favorite part was the horse roping. Clay and Tyler the the carnival rides. Clay rode his very first adult carnival ride. I hope we do it again next year.
