So I don't mind cooking. But I really hate when there are complainers and most of all I hate cleaning up the mess. But once in a while I find something that I really enjoy and don't mind cleaning up. It is out of the 2008 Pillsbury Bake-off cook book.
Malinda and I tryed it when she was out here and stayed the week with me, we both thought it was the best breakfast we had in a long time.So I thought I would share it with everyone. It says it takes 40 minutes for start to finish, but it really doesn't take that long.
Tropical Sunshine Flat cakes with Orange Cream
Ingredents:
Flat cakes
1 tablespoon Crisco pure vegetable oil
1/2 cup fishers chef naturals pecans
1 can Pillsbury's refrigerated orange flavor sweet rolls with icing (8 rolls)
Topping
2 tablespoon land o lakes butter
2 firm rip bananas sliced
2 tablespoon lime juice
1 cup fresh or canned pineapple tidbits drained
1 jar (12oz) smuckers pineapple ice cream topping
1 can (15oz) mandarin orange segments in light syrup drained
Orange Cream
1 1/4 cups whipping cream
icing from can of sweet rolls
1. Heat oven to 400f. Generously brush 1 tablespoon oil on large cookie sheet
2. Cut waxed paper sprinkle 1 1/2 teaspoons nuts on sheet. Place orange roll on pecans sprinkle 1 1/2 teaspoons nuts on top of orange roll. using rolling pin roll evenly until orange roll is 4 1/4 inches in diameter. remove waxed paper. place rolls on cookie sheet. repeat with reaming rolls.
3. bake for 8-10 minutes or until golden brown.
4. meanwhile, in 10-inch skillet, melt butter over medium high heat. Add bananas, lime juice and pineapple; cook 1 minute, stirring frequently. reduce heat to medium -low. gently stir in pineapple topping; cook 3-4 minutes, stirring occasionally, until warmed. gently stir mandarin oranges.
5. In medium bowl beat whipping cream and icing with electric mixer on high until soft peaks form.
6. to serve, top flat cakes with warm pineapple topping and orange cream.
Hints- when we first made this I didn't have the ice cream topping or the lime juice instead we used crushed pineapple instead of tidbits.

Musuem Trip
This year instead of going somewhere fun out of state for are family vacation we stayed here. We took one day before school started and choose some museum's around Salt lake to visit. We started at the Living Planet Aquarium The Coolest things there were the octopus, they had three types of jelly fish one kind changed colors. The Sting rays you could feel, they were rubbery and slimy. It was something to visit once and then never go back again. It is very small and for the price they charge it doesn't seam worth it.
Then it was lunch time, so we thought the boys might like the Mayan Restaurant. they liked the cliff divers, although we didn't much like the food.
Randy's friend had told him about this store called the NPX. He told him it was off of 215 and California Ave. We couldn't find it, so we pulled into a gas station and looked it up in the phone book and found three listings we choose the closes to where we were. It is off of Redwood rd. and a block south of California and a block west of redwood rd, so much for it being right off of 215 and California.
Its kind of a warehouse store, its worth going to if you're in the area but not worth just going to.
Then we headed to the Discovery Museum at the Gateway mall. Buy the time we got there we only had an 1 1/2 to go through it. The coolest part I thought was the ball area. the Tyler like the news station area, he is very into watching the news lately , so I think he like the idea of sitting behind the news desk. Clays favorite was the climbing wall. It wasn't as fun as we thought it would be. So since we were at the gateway and Randy had never been to the Clark Planetarium we visited it. My favorite thing there is watch the pendulum,and how the earth is moving making it move. I think Randy's favorite was the moon rocks and the meteorites and the boys like the 2news weather board.
All in all we had a great time, but we were all a little disappointed in the museum's. We probably well never go back to any of them again. But it was fun spending time together as a family. next year we will have to do something fun and exciting.
